Blueberry vinaigrette

    This blueberry vinaigrette dressing is made with fresh blueberries, vinegar and honey and has a good sweet-tart balance. Nice use for a handful of over ripe blueberries if you have them. The dressing is lovley on a green salad with feta cheese and toasted walnuts.

    Serves: 14 

    • 180ml vegetable oil
    • 70g fresh (or frozen) blueberries
    • 2 tablespoons white vinegar
    • 2 tablespoons balsamic vinegar
    • 2 tablespoons honey

    1. Combine oil, blueberries, white vinegar, balsamic vinegar and honey together in a food processor; blend until smooth.
