Easiest tomato soup ever

    Using the microwave and blender this store cupboard soup was on the table in less than 10 minutes and it was fragrant and delicious. It served four good portions. I used a 900w microwave and a jug type blender. I used a Vitamix so I could put the very hot soup straight in it but in some blenders you have to let your liquid cool a little - but if you have a hand wand blender you could use that straight away.

    Ingredients
    Serves: 4 

    • 1 red onion, chopped
    • 1 good knob butter
    • 2 (450g) tins plum tomatoes
    • 1 teaspoon dried mixed herbs
    • 1 chicken stock cube, crushed
    • sea salt and pepper to taste
    • 2 tablespoons of milk

    Method
    Prep:6min  ›  Cook:9min  ›  Ready in:15min 

    1. Microwave the onion and butter on high for 2 minutes.
    2. Add all of the other ingredients and microwave on high for 7 minutes.
    3. Place in blender and whizz for 1 minute or until you have the smooth texture you want.
    4. Taste for seasoning then serve!

    Tip

    Once when I made it I left a bowl of creme fraiche on the table so that anyone who wanted could add a dollop as a garnish to their bowl
