Sweetcorn cake

    An easy Mexican cake made with fresh sweetcorn kernels and shop-bought pancake mix. It's sweet - Mexicans enjoy it as a dessert with warm honey on top.

    Serves: 16 

    • 330g fresh sweetcorn kernels
    • 4 eggs
    • 240ml milk
    • 225g butter, melted and cooled
    • 200g granulated sugar
    • 270g pancake or batter mix, sifted

    1. Preheat oven to 180 C / Gas 4. Grease and flour a 20x30cm (9x13 in) baking dish.
    2. In a blender, blend sweetcorn with eggs, milk, butter and sugar, until smooth. Pour into a bowl, add the pancake mix and mix well. Pour cake mixture in prepared baking dish.
    3. Bake until cooked through and golden brown, about 45 minutes.
