American style pancakes

    This is my own tried and tested recipe for fluffy American style pancakes. Goes really well with all kinds of fillings and toppings, including the standard bacon strips and maple syrup. In fact, you can even chop the bacon and add it to the mix before cooking. We also love raspberries, blueberries, strawberries, caramelised apple with cinnamon, cherries, etc. Works great as a dessert or breakfast.

    Serves: 4 

    • 220g self-raising flour
    • 1 tablespoon granulated or caster sugar
    • 1 teaspoon baking powder
    • 1/2 teaspoon salt
    • 300ml milk
    • 1 egg
    • 20g butter
    • 1 tablespoon olive oil (for the pan)

    1. Sift the flour into a large mixing bowl, making a well before adding the sugar, baking powder and salt.
    2. In the measuring jug you used for the milk, add the egg and use a fork to mix.
    3. Slowly add the milk-egg mixture to the flour mixture in the mixing bowl to avoid large lumps in the mixture that won't cook properly. This should form a batter with a slightly thick consistency.
    4. Next melt the butter in a microwave before adding it to the batter, and then mix in. If you're lucky enough to own one or have one, an electric mixer works well to remove any lumps that may have formed in the last step. If not hand mixing works just as well but takes a little more time.
    5. Let the mixture sit for a couple of minutes, use this time to prep whatever filling you'd like to add whether it's washing and chopping berries or cooking bacon. You should see the batter bubbling and it's then ready to add your filling and cook.
    6. Add the oil to the pan on a low heat. Once oil is hot, ladle in some batter. You'll know when to flip to the other side when the pancake starts bubbling on top again. Rinse and repeat until the batter is gone!
