    About this recipe: These sweetcorn fritters call for fresh sweetcorn, eggs and a dash of cayenne pepper to make a delightful summer side dish with a touch of heat.

    Serves: 6 

    • 3 egg whites
    • 250g fresh sweetcorn kernels
    • 3 egg yolks, beaten
    • 30g sifted plain flour
    • 1/2 teaspoon salt
    • 1 dash cayenne pepper
    • 6 tablespoons vegetable oil

    1. Beat egg whites in a clean glass or metal bowl until stiff peaks form.
    2. Mix sweetcorn, egg yolks, flour, salt and cayenne pepper together in a large bowl; fold beaten egg whites into the sweetcorn mixture.
    3. Heat oil in a large pan over medium-high heat. Working in batches, drop corn mixture into hot oil by the tablespoonful in several spots without crowding the pan; cook until browned and set, 2 to 3 minutes per side. Repeat with remaining mixture.
