Chocolate and peanut butter cornflake buns

    Sweet and salty, a childhood classic gets updated to include peanut butter! They are still quick and easy to make, requiring only 3 ingredients.

    Serves: 12 

    • 170g chocolate chips
    • 2 tablespoons peanut butter
    • 85g cornflakes

    Prep:5min  ›  Cook:5min  ›  Extra time:30min chilling  ›  Ready in:40min 

    1. Combine chocolate chips and peanut butter in a saucepan over low heat; cook and stir until melted, 2 to 3 minutes. Stir in cornflakes until coated.
    2. Drop spoonfuls of the cornflake mixture onto a baking tray lined with greaseproof paper. Chill in the fridge until cool, about 30 minutes.

    I followed this to the letter and it was very nice! The peanut butter not only brought its unique flavour but I felt that it tasted like salted chocolate caramel, which is definitely no bad thing!!! 😋 Kept in the fridge, they stayed together beautifully, they also stored well in an airtight container out of the fridge but were noticeably softer, but that just mimicked them being fresh out of the oven, win, win all round! So easy and quick to make. I do wonder how they may taste with a chocolate and Baileys mix, hmmmm 😉 I have an order from the boss for more and soon.     I will preface this review by stating that I've had to cut out dairy and soy for my daughter, who is still breastfeeding. With that being said, these are one of the BEST dairy/soy free sweet treats that I have made in months. To comply with my dietary restrictions, I used Enjoy Life chocolate chips and natural peanut butter. I stuck to one cup of the chocolate chips, but did large, heaping tablespoons on the peanut butter. I also substituted the Cornflakes for Rice Krispies.
