Raw chocolate mousse

    This raw chocolate mousse is smooth, creamy and dairy free. It just melts in your mouth. With only a few ingredients you will make this healthy dessert in a couple of minutes. Mousse can be served immediately or refrigerated for a thicker consistency.

    Serves: 2 

    • 100g cashew nuts
    • 3 tablespoons agave syrup, or to taste
    • 2 tablespoons cocoa powder, or to taste
    • 2 tablespoons creamed coconut

    Method

    1. Blend cashews in a blender to a smooth butter consistency, about 2 minutes. Add agave syrup, cocoa powder and creamed coconut; blend until smooth and creamy.

    Tip

    Soak cashews overnight for an even creamier texture. Rinse and dry well before adding to the recipe.

    First of all if you donot have a vitamix do NOT try this recipe - you will burn your motor up trying to use a regular blender. That said, I followed the recipe and think the coconut cream amount is off. I used my vitamix on high speed 10 and the 2 Tbsp coconut cream was not enough. I easily added 1/3 cup coconut cream.     This is wonderful! It has a strong chocolate-y taste if you follow the recipe which is very rich and lovely. However, I put a banana in mine to add to the body and provide a complementary flavor.  -  19 Feb 2017  (Review from Allrecipes US | Canada)
