Broad bean pâté

    A vegetarian and vegan pâté that anyone can enjoy as a starter. Serve with rolls and butter, or warm slices of wholemeal toast.

    Ingredients
    Serves: 4 

    • 400g cooked broad beans (fresh or tinned)
    • juice of 1 to 2 lemons
    • 3 to 4 tablespoons chopped fresh parsley
    • 2 slices onion
    • 1 tablespoon olive oil
    • salt and pepper to taste

    1. Place all ingredients in blender and blend to the desired texture.

    Tip

    You can use raw onion or lightly fry the onion first before blending. If made with raw onion serve immediately; it doesn't keep. It will keep if the onions are fried. For a higher protein content, blend in some tofu.
