Warm winter cabbage and apples

    An unusual combination for a winning side dish to a winter meal. Serve with a slice of nut roast, or Quorn® fillet. Goes well with leeks in white sauce and mashed or roast potatoes.

    Serves: 2 

    • 400g finely chopped cabbage
    • 1 to 2 pinches caraway seed
    • 2 whole Bramley apples
    • salt and pepper to taste
    • 4 to 6 tablespoons shredded fennel (optional)

    1. Cook the cabbage in boiling water with one pinch of caraway seed, until tender. Drain.
    2. Meanwhile, cook the whole apples by either gently boiling in water till tender, or baking in a moderate oven.
    3. Remove apple flesh from skins (discard skins) and mix well with cabbage and fennel (if using) over a low heat.
    4. Add additional caraway seeds and stir over low heat for a couple of minutes, then serve.
