Red lentil soup with a kick

    A lovely and hearty red lentil soup with a few extras thrown in for a kick. It's very, very tasty.

    Serves: 6 

    • 2 tablespoons olive oil or bran oil
    • 1 large leek, trimmed and thinly sliced
    • 4 to 5 medium carrots, cut lengthways and sliced into half moons
    • 300g red lentils
    • chilli powder to taste
    • ground cumin to taste
    • 1.5L chicken stock

    1. Add olive oil to a large saucepan over medium high heat and soften the leeks. Add carrots, lentils and spices to the pan and stir for a minute, coating in oil. Add stock and bring to the boil. Reduce heat to a simmer and cook for 45 minutes, or till lentils are cooked and veg is tender.


    You can also add your choice of additions, like garlic, red or yellow peppers, cayenne pepper, etc.
