Add olive oil to a large saucepan over medium high heat and soften the leeks. Add carrots, lentils and spices to the pan and stir for a minute, coating in oil. Add stock and bring to the boil. Reduce heat to a simmer and cook for 45 minutes, or till lentils are cooked and veg is tender.
You can also add your choice of additions, like garlic, red or yellow peppers, cayenne pepper, etc.
