About this recipe: Nuts are a perfect & delicious way to get protein into your diet! This recipe includes cashew nuts and almonds. Cashew nuts contain important vitamins & minerals which help to maintain a healthy bodily function! Almonds contain healthy fats, vitamins and minerals. They also reduce hunger and help to lower blood sugar levels! This recipe is easy to make and only includes 8 ingredients. Coated nuts are a great and tasty snack. They also make good on the go snacks, or even as a starter to your meal!

Serves: 8 

  • 2 tablespoons curry powder
  • 1/4 teaspoon cumin seeds
  • 1 teaspoon light olive oil
  • 2 1/2 tablespoons water
  • 1 teaspoon maple syrup
  • 1 pinch salt
  • 250g cashew nuts
  • 150g almonds

  1. In a lage mixing bowl, add the curry powder, cumin seeds, oil, water, maple syrup and salt. Mix with a wooden spoon until fully combined and smooth.
  2. Add the nuts, toss until each nut has been coated! Line a baking tray with parchment and cover with the nuts in an even layer.
  3. Pop into the oven at 180 C / Gas 4 for 25 to 30 minutes, or until fully roasted!
  4. Once roasted and smelling divine, carefully remove the tray from the oven.


Serve while warm or eaten when cool. Store in a airtight container and nibble when hungry!
