Cherry energy balls

Cherry energy balls

About this recipe: I have been loving the Nakd bakewell bars so much, I have decided to create my own version, using only a few ingredients. The Nakd bars are delicious, but when bought on a regular basis, they work out expensive. The Nakd bars count as one of your 5 a day and contain a good level of protein and nutrients! The Nakd bars are a great alternative to processed and sugar snacks, as they contain natural ingredients with natural occurring sugars. They are cold pressed and never baked with no added sugars or syrups, just pure goodness! Bakewell is usually cherry and almonds together, which forms a delightful aromatic and sweet flavour!

Serves: 6

  • 200g pitted dates
  • 130g cashew nuts
  • 2 tablespoons almond extract
  • 50g dried cherries
  • 50g raisins
  • 30g flaked almonds, toasted
  • chia seeds (optional)

Prep:10min  ›  Extra time:2hr chilling  ›  Ready in:2hr10min

  1. Place all of the ingredients into a food processor or blender. Process at high speed until the ingredients come together (making sure to scrape down the edges as they mixture tends to stick inside the blender). This should take around 5 minutes at most.
  2. Once your mixture smells yummy and is ready, mould into bars or balls and place onto a lined tray.
  3. Allow to set in the fridge for 2 hours.

These bars (and bite-sized balls) are great in energy and protein, as well as tasting like an unhealthy cake. They are a great snack to take on the go in your handbag, a pre/post gym workout snack, healthy breakfast bar. These bars should be kept in a sealed container in the fridge to munch on whenever!
