Twenty-four hours before making kebabs, marinate your chicken. Into a big bowl add oil, soy sauce, honey, basil, oregano, garlic, salt and pepper, and whisk until combined. This is going to be a lot of food to cook so do it a bit at a time, trust me it's easy once you get into it. Get a big frying pan on a medium to high heat and put a handful of chicken in with a handful of veg. Cook evenly until the chicken chars. Don't overcrowd the pan, otherwise the chicken won't brown.
Remove chicken and veg onto a big serving platter and repeat step 3 until all food is cooked.
Toast your pittas and serve with mixed salad, lemon, sauces - anything you like.
