About this recipe: Easy one for the lads to make, impress your mates or other half with a quick alternative to going to the kebab house. A lot healthier and cheaper.

Serves: 4 

  • 5 tablespoons olive oil
  • 5 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 1/2 teaspoons garlic powder
  • salt and pepper
  • 800g boneless chicken thighs
  • 1 punnet chestnut mushrooms
  • 1 onion
  • 2 peppers
  • 8 pitta breads or wraps
  • mixed leaf salad

  1. Twenty-four hours before making kebabs, marinate your chicken. Into a big bowl add oil, soy sauce, honey, basil, oregano, garlic, salt and pepper, and whisk until combined. Dice chicken then mix into your marinade, cover with cling film and place in the fridge. Will be okay after a couple of hours, but best after a full day.
  2. Wash and chop all your vegetables into decent chunks.
  3. This is going to be a lot of food to cook so do it a bit at a time, trust me it's easy once you get into it. Get a big frying pan on a medium to high heat and put a handful of chicken in with a handful of veg. Cook evenly until the chicken chars. Don't overcrowd the pan, otherwise the chicken won't brown.
  4. Remove chicken and veg onto a big serving platter and repeat step 3 until all food is cooked.
  5. Toast your pittas and serve with mixed salad, lemon, sauces - anything you like.
