Spicy tomato jam

    Tomatoes, apple, onion and sugar are simmered into a sweet jam that gets a spicy kick from cayenne pepper.

    • 1.8kg tomatoes, peeled and chopped
    • 1 large apple, peeled and chopped
    • 195g demerara sugar
    • 1 sweet onion, diced
    • 110g brown sugar
    • 4 tablespoons apple cider vinegar
    • 3 tablespoons lemon juice
    • 1 teaspoon salt
    • 1/2 teaspoon ground cayenne pepper, or more to taste

    1. Combine tomatoes, apple, demerara sugar, onion, brown sugar, apple cider vinegar, lemon juice, salt and cayenne pepper in a large pot; bring to the boil. Reduce heat and simmer, stirring occasionally, until dark and syrupy, about 2 hours 30 minutes. Continue simmering until mixture thickens to a jam-like consistency, about 30 minutes more.
    2. Remove jam from heat and cool to room temperature, 1 to 2 hours. Transfer to lidded containers and store in fridge.

    I had a combination of yellow and red tomatoes and thought this jam would be perfect to use up the last of our harvest.
