About this recipe: Enjoy these baked beetroot crisps in your lunch, as a snack, or simply as a delicious alternative to crisps.

Serves: 4 

  • cooking spray
  • 5 large beetroots, peeled and thinly sliced
  • 1 tablespoon olive oil, or as needed
  • salt and ground black pepper to taste

  1. Preheat oven to 200 C / Gas 6. Spray a baking tray with cooking spray.
  2. Spread sliced beetroot out in a single layer on the prepared baking tray. Brush the beetroot slices on both sides with olive oil and season with salt and pepper.
  3. Bake in the preheated oven for 15 minutes. Turn beetroot slices and continue cooking until crisp, another 15 to 20 minutes. Transfer beetroot crisps to a wire cooling rack.
