    About this recipe: Enjoy these baked beetroot crisps in your lunch, as a snack, or simply as a delicious alternative to crisps.

    Serves: 4 

    • cooking spray
    • 5 large beetroots, peeled and thinly sliced
    • 1 tablespoon olive oil, or as needed
    • salt and ground black pepper to taste

    Prep:15min  ›  Cook:30min  ›  Ready in:45min 

    1. Preheat oven to 200 C / Gas 6. Spray a baking tray with cooking spray.
    2. Spread sliced beetroot out in a single layer on the prepared baking tray. Brush the beetroot slices on both sides with olive oil and season with salt and pepper.
    3. Bake in the preheated oven for 15 minutes. Turn beetroot slices and continue cooking until crisp, another 15 to 20 minutes. Transfer beetroot crisps to a wire cooling rack.

    Let me start by saying I dislike beets. I rated this 5 stars because it does taste good considering my opposition to beets. So far, this recipe has been the only way I've found beets edible.  -  25 May 2014  (Review from Allrecipes US | Canada)

    Thank goodness I only started with one beet. I set my timer for 12 minutes (for the first 15 minute period) and had to snatch them out before they set off the smoke alarm (burned black and beyond any possibility of recognition). There was absolutely no way they could possibly cook at 400 degrees F for a total of 30-35 minutes! Or maybe someone's temp selector is off just a bit. Or something.
