About this recipe: These banana and raisin muffins are made with wholemeal flour and oat bran. I've tried to keep the refined sugar amount low and used unsweetened apple sauce and maple syrup to make them taste fantastic!


Serves: 12 

  • 75g strong wholemeal pastry flour
  • 60g wholemeal flour
  • 100g oat bran
  • 50g caster sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 125g raisins
  • 120ml 0% fat plain yogurt
  • 60g low fat soured cream
  • 60ml unsweetened apple sauce
  • 60ml maple syrup
  • 2 teaspoons egg white
  • 1 teaspoons vanilla extract
  • 3 small ripe bananas, mashed
  • 30g chopped pecans

  1. Preheat oven to 200 C / Gas 6. Grease a 12-hole muffin tin.
  2. In a large bowl, whisk together wholemeal flour, oat bran, sugar, baking powder and salt. Stir in raisins. In another bowl, mix together yogurt, soured cream, applesauce, maple syrup, egg white, vanilla and mashed bananas. Pour yogurt mixture into flour mixture; mix just enough to combine. Spoon muffin mixture evenly into muffin tin. Sprinkle one teaspoon pecans over each muffin.
  3. Bake muffins in preheated oven for 15 to 20 minutes. Remove from oven and transfer muffins to a wire rack to cool.
