Potato salad with vinaigrette

    The vinaigrette dressing for this potato salad is made with beef consomme, tarragon vinegar and vegetable oil.

    Serves: 5 

    • 9 potatoes
    • 120ml vegetable oil
    • 4 tablespoons tarragon vinegar
    • 4 tablespoons beef consomme
    • 25g chopped spring onions
    • 2 tablespoons chopped fresh parsley
    • 1 teaspoon salt
    • 1 teaspoon freshly ground black pepper

    1. Bring a large pot of salted water to the boil. Add potatoes; cook until tender but still firm, about 15 minutes. Drain, and transfer to a large bowl. Cool slightly. Peel and slice into a large bowl.
    2. In a small bowl, combine oil, vinegar, consomme, spring onion, parsley, salt and pepper.
    3. Gently toss warm potatoes with dressing. Cover and refrigerate several hours or overnight for best flavour.
