Peanut butter cheesecake

    The most delicious peanut butter cheesecake ever!

    • 300g chocolate digestive biscuits
    • 120g melted unsalted butter
    • 250g cream cheese
    • 110g caster sugar
    • 340g soft peanut butter
    • 150ml milk
    • 3 gelatin leaves (Dr Oetker)


    1. Place digestive biscuits in a food processor and blitz. Alternatively, place in a clear sandwich bag and smash with a rolling pin.
    2. Mix melted butter with digestive crumbs and flatten in the bottom on a spring form cake tin. Refrigerate until filling is ready.
    3. In a bowl, mix together caster sugar and cream cheese.
    4. Cut gelatin leaves and soak in cold water for 5 mins. Once soaked add to milk.
    5. Place milk/gelatin leaves and peanut butter in a small saucepan and gently heat until runny.
    6. 6. Combine peanut butter mixture & cream cheese mixture. Leave to cool
    7. Pour filling onto base and decorated with reeces peanut butter cups.
    8. Refrigerate for at least 24 hours.
