    An easy chocolate fudge cake layered with buttercream. It's super chocolaty and a must for any cake lover!

    Makes: 1 (20cm) chocolate fudge cake

    • For the cake
    • 80g cocoa powder
    • 7 tablespoons boiling water
    • 110g baking spread or butter
    • 300g golden caster sugar
    • 3 large eggs
    • 5 tablespoons whole milk
    • 180g self-raising flour
    • 1 generous teaspoon baking powder
    • For the buttercream
    • 250g unsalted butter, softened
    • 500g icing sugar
    • 1 teaspoon vanilla extract
    • 80g cocoa powder
    • 100g double cream or whole milk

    1. Preheat the oven to 200 C / Gas 6. Grease and line a 20cm (8 in) round cake tin.
    2. In a small cup or bowl, sift the cocoa powder and add the boiling water, mixing well. Set aside.
    3. Cream together the butter and sugar in a large mixing bowl on low speed. Add eggs one at a time, beating after each addition.
    4. Add the cocoa mixture and all remaining cake ingredients to the butter mixture, and mix well until smooth. Pour into your cake tin.
    5. Bake for around 30 minutes or until the cake tester comes out clean. Leave to cool in its tin for 10 minutes before taking it out and leaving to cool completely.
    6. For the buttercream, sift the cocoa and icing sugar into a bowl. Add the vanilla, butter and double cream or milk. Mix well until fully blended and soft. This should take around 10 minutes.
    7. Once cooled slice the cake into layers, spreading a layer of buttercream between each layer.
    8. Spread the remaining buttercream around the outside of the cake and decorate as desired.


    Adding a shot of espresso to the cake will also balance the cocoa and give a fuller flavour in the sponge. Mixing the cocoa powder with the hot water creates the fudge within the cake.
