About this recipe: These breakfast muffins made with oat bran, flaxseed, carrots, apples and nuts are loaded with fibre and flavour.

Makes: 15 muffins

  • 200g plain flour
  • 115g milled flaxseed
  • 70g oat bran
  • 220g brown sugar
  • 2 teaspoons bicarbonate of soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 180ml skimmed milk
  • 2 eggs, beaten
  • 1 teaspoon vanilla extract
  • 2 tablespoons vegetable oil
  • 225g grated carrots
  • 2 apples, peeled and grated
  • 80g raisins
  • 135g chopped mixed nuts

  1. Preheat oven to 180 C / Gas 4. Grease muffin tins or line with paper cases.
  2. In a large bowl, mix together flour, flaxseed, oat bran, brown sugar, bicarbonate of soda, baking powder, salt and cinnamon. Add the milk, eggs, vanilla and oil; mix until just blended. Stir in the carrots, apples, raisins and nuts. Fill muffin cases 2/3 full with batter.
  3. Bake in preheated oven for 15 to 20 minutes, or until a skewer inserted into the centre of a muffin comes out clean.
