Scrub the potatoes and prick with a fork. Set the microwave to 9 minutes on high and cook the potatoes until tender (you may need a more or less time depending on the size of your potatoes and your microwave).
Cut a slice lengthwise halfway through each potato and add a knob butter to each.
In a bowl mix the cheese and carrot and divide it equally between the potatoes. Place in the microwave for 30 seconds on high, or until cheese is melted and bubbly. Serve immediately.
I am making these jacket potatoes right now because I love jacket potatoes; like most British people.
I heat my normal oven to 180 degrees Celsius, and once the potatoes are done in the microwave oven, I put them straight into the normal oven for 20 minutes to crisp up the jacket. I put a tin of baked beans to heat in the microwave oven. I slice down the middle and fork the fluffy potato with Bertolli margarine, then add salt, pepper, chilli flakes, basil, and baked beans and grated mozzarella cheese then put back in the microwave oven to melt the cheese.
