    About this recipe: A simple vanilla cake iced with buttercream and covered in sprinkles. Use rainbow and silver sprinkles for a pretty effect.

    Makes: 1 cake

    • 2 large eggs
    • 125g caster sugar
    • 125g butter or margarine, softened
    • 125g self raising flour
    • 1 teaspoon vanilla extract
    • Icing and decorations
    • 140g butter, softened
    • 280g icing sugar
    • 2 teaspoons milk
    • sprinkles, chocolate drops

    1. Pre-heat the oven to 180 C / Gas 4. Grease a 21cm circular cake tin.
    2. Add all of the ingredients into a bowl and mix them together, starting with the eggs and finishing with the vanilla. Pour the mixture into the tin.
    3. Bake cake in the preheated oven for 15 to 25 minutes, till a skewer inserted in the centre comes out clean. Remove from oven and let cool completely.
    4. Meanwhile, make the icing. Beat the butter till fluffy, then add the icing sugar and milk and beat till combined.
    5. Once cool, remove cake from tin and spread with icing, then randomly spread the sprinkles and the chocolate drops around the cake.
