Vanilla popcorn

    Popcorn kernels are popped in hot oil, then flavoured with fresh vanilla, butter, sugar and a pinch of salt.

    Serves: 15 

    • 60ml corn oil
    • 1 vanilla bean, split lengthwise
    • 150g popcorn kernels
    • 1 tablespoon caster sugar
    • salt to taste
    • 2 tablespoons butter, melted

    1. Heat oil in a large pot over medium-high or high heat for a minute. Add one kernel of popcorn to the oil. When the kernel pops, pour in the remaining popcorn and the vanilla bean. Place a lid on the pot, and shake gently until the corn starts to pop. Shake vigorously until the popping subsides.
    2. Remove from the heat and pour into a large bowl. Remove the vanilla bean from the corn. Scrape seeds from the vanilla bean and mix them with the sugar. Stir sugar, salt and melted butter into the corn until evenly coated; serve.

    Yummy! This is a great and simple recipe. I made it a few times. The second time, I used two vanilla beans because I had a lot of them in the cupboard and I really like the vanilla taste.
