Cranberry and nut oat bars

    These cranberry and pecan cereal bars also have oats, flaxseed, wheatgerm and chocolate chips. Everyone loves them!

    Ingredients
    Serves: 16 

    • 160g quick-cooking oats
    • 120g dried cranberries
    • 100g pecan halves
    • 80g milled flaxseed
    • 125g milk chocolate chips
    • 30g wheatgerm
    • 220g light brown sugar
    • 120ml honey
    • 2 tablespoons vegetable oil
    • 1/2 teaspoon salt
    • 1 teaspoon vanilla extract
    • 1/2 teaspoon ground cinnamon

    Method

    1. Preheat oven to 180 C / Gas 4. Line an 20cm square baking tin with baking paper.
    2. Mix oats, cranberries, pecans, milled flaxseed, chocolate chips and wheatgerm together in a bowl.
    3. Stir brown sugar, honey, vegetable oil and salt together in a large microwave-safe bowl; heat in microwave for 30 seconds. Stir mixture and heat in microwave again until smooth, about 30 seconds more. Stir vanilla extract and cinnamon into brown sugar mixture.
    4. Stir brown sugar mixture into oats mixture until evenly mixed and chocolate is melted; pour into the prepared baking tin.
    5. Bake in the preheated oven until edges are golden brown, about 30 minutes. Lift bars out of tin by pulling up the baking paper; cool for 5 minutes before cutting into bars.

    Cook's Notes:

    If the bars are too crumbly even though you mixed the dry and liquid ingredients well, add a little more honey to your liquid mixture.

    12.4.15 I liked the taste of these bars, but they are crumbly and falling apart. I read the Cook's Notes, but I don't think you can tell what the consistency is going to be until you bake them. I packed them firmly into the dish and actually baked them an additional 5 minutes. Followed the recipe except for using white chocolate chips (what I had on hand) and roughly chopping the pecans.
