Spiralised courgette with red pepper and tomatoes

    Skip the pasta and use spiralised courgette instead. Add fresh cherry tomatoes, red pepper and grated pecorino cheese for a light, yet flavour-packed dish.

    Serves: 2 

    • 1 courgette, or more to taste
    • 1 teaspoon salt, or as needed
    • 4 tablespoons olive oil
    • 1 small onion, thinly sliced lengthwise
    • 1/2 red or yellow pepper, cut into matchstick-sized pieces
    • 150g red or yellow cherry tomatoes
    • 1/2 teaspoon garlic powder
    • 2 tablespoons milk, or more to taste
    • 120g grated pecorino cheese
    • 1/2 teaspoon freshly ground black pepper
    • 1/2 teaspoon dried oregano

    1. Slice courgette into thin strands using a vegetable peeler or spiraliser; toss with salt until combined. Drain on kitchen roll until moisture is drawn out; about 20 minutes. Squeeze courgette to remove remaining moisture.
    2. Heat olive oil in a pan over medium heat. Add onion and red pepper; cook and stir until onion is soft, about 5 minutes. Stir in tomatoes and cook until soft, 3 to 4 minutes.
    3. Stir courgette into the onion mixture; cook and stir until tender and mixture looks dry, about 5 minutes. Sprinkle with garlic powder. Stir in milk and cook, 1 to 2 minutes. Add grated pecorino cheese, pepper and oregano; stir until combined.

    My family loved it! We had it as a side. My only comment is possibly should use a little less olive oil. I had a hard time with trying to cook it until it was dry. Flavor was awesome though!  -  08 Sep 2018  (Review from Allrecipes US | Canada)
