Garlic-lime chicken drumsticks

    Chicken drumsticks marinated with lime juice, garlic and spices are roasted until dark and tender in this recipe that's sure to please.

    Serves: 10 

    • 4 tablespoons olive oil
    • 1 large lime, juiced, or more to taste
    • 2 teaspoons garlic powder
    • 2 teaspoons onion granules
    • 1 teaspoon chilli powder
    • 1 teaspoon dried oregano
    • 1 teaspoon dried parsley
    • 1/2 teaspoon freshly ground black pepper
    • 10 skinless chicken drumsticks

    1. Combine olive oil, lime juice, garlic powder, onion granules, chilli powder, oregano, parsley and black pepper in a large resealable food bag. Add chicken drumsticks; turn to coat evenly. Seal bag, squeezing out all the air.
    2. Let chicken marinate in the fridge, at least 2 hours and preferably overnight.
    3. Preheat oven to 220 C / Gas 7. Line a baking tray with foil.
    4. Let chicken come to room temperature, about 25 minutes. Arrange on the baking tray.
    5. Roast in the preheated oven until browned, about 25 minutes. Flip chicken and baste with juices; continue cooking until browned on the second side, 10 to 15 minutes more.
    6. Cover chicken with foil. Let rest before serving, about 5 minutes.

    I made this last night. I cut the recipe back to 3 drumsticks because it's just the hubby and me. Added a bit more lime as others have suggested and swapped out the oregano and parsley for fresh cilantro. Super tasty, even my hubby loved it and he usually Hates citrus with meat!     Made this last night. Added extra lemon juice, paprika, garlic salt, and chopped garlic. Did not have onion powder. Turned out great; however, would probably decrease cook time and end with broil to crisp up the skin on the drumsticks.  -  07 Jun 2018  (Review from Allrecipes US | Canada)


    Pretty delicious. Very moist chicken. Followed recipe closely. Added double garlic and extra hot chilli pepper. Marinated for two hours, and was good, I will marinate overnight next time and add a bit extra lime juice.  -  26 May 2018  (Review from Allrecipes US | Canada)
