About this recipe: Chicken drumsticks marinated with lime juice, garlic and spices are roasted until dark and tender in this recipe that's sure to please.

  • 4 tablespoons olive oil
  • 1 large lime, juiced, or more to taste
  • 2 teaspoons garlic powder
  • 2 teaspoons onion granules
  • 1 teaspoon chilli powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried parsley
  • 1/2 teaspoon freshly ground black pepper
  • 10 skinless chicken drumsticks

  1. Combine olive oil, lime juice, garlic powder, onion granules, chilli powder, oregano, parsley and black pepper in a large resealable food bag. Add chicken drumsticks; turn to coat evenly. Seal bag, squeezing out all the air.
  2. Let chicken marinate in the fridge, at least 2 hours and preferably overnight.
  3. Preheat oven to 220 C / Gas 7. Line a baking tray with foil.
  4. Let chicken come to room temperature, about 25 minutes. Arrange on the baking tray.
  5. Roast in the preheated oven until browned, about 25 minutes. Flip chicken and baste with juices; continue cooking until browned on the second side, 10 to 15 minutes more.
  6. Cover chicken with foil. Let rest before serving, about 5 minutes.
