Chicken with spicy sauce and cashews

About this recipe: I made this up myself, served with rice. Recipe for one. Takes no more than 25 to 30 minutes.

Serves: 1 

  • 1 single portion white rice
  • olive oil for frying
  • 1 chicken breast, chopped into chunks
  • 1 pinch turmeric, or to taste
  • 1/2 tin chopped tomatoes
  • 1 teaspoon curry powder
  • 1 clove garlic, chopped
  • 1/4 red onion, chopped finely
  • 1/4 green pepper, chopped
  • 1/4 red pepper, chopped
  • 1 handful cashew nuts

  1. Put rice on as per packet instructions.
  2. Place olive oil in frying pan over medium high heat. Add in the chicken and sprinkle with turmeric. Cook for 3 to 5 minutes until the chicken is mostly white in the outside.
  3. Add the chopped tomatoes, curry powder, garlic, onion, peppers and cashews and cook until chicken is completely cooked through.
  4. Fluff up the rice with a fork, then serve with the chicken and sauce on top.
