Easy fancy sardines on toast

    A very easy, Mediterranean-inspired sardines on toast recipe. Takes only 5 minutes to prepare and cook.

    Serves: 2 

    • 2 slices brown bread
    • 1 tin sardines
    • 1 spring onion
    • salt and pepper to taste
    • 1 clove garlic
    • olive oil
    • 4 slices tomato
    • chives or other herbs
    • squeeze of lemon

    1. Put bread in toaster. When toasted, let slices cool for a minute or two.
    2. Meanwhile, drain the sardines, chop the spring onion, and mash together with some salt and pepper.
    3. Peel the clove of garlic and rub it directly onto the toast. Drizzle with olive oil.
    4. Spread sardine mixture onto toast. Top with tomato, chopped herbs and lemon juice.
    5. Stick under the grill for 3 to 5 minutes. Voila!

    Cook's note

    When done I like to add more lemon, but you don't have to of course.
