Joy's easy banana bread

    This easy banana bread loaf cake recipe is quick to prepare, and everyone always comes back for seconds!

    Serves: 10 

    • 3 ripe bananas, mashed
    • 200g caster sugar
    • 1 egg
    • 60g melted butter
    • 200g plain flour
    • 1 teaspoon bicarbonate of soda
    • 1 teaspoon salt

    1. Preheat oven to 160 C / Gas 3. Grease a 23cmx13cm loaf tin.
    2. Combine bananas, sugar, egg and butter together in a bowl. Mix flour and bicarbonate of soda together in a separate bowl; stir into banana mixture until batter is just mixed. Stir salt into batter. Pour batter into the prepared loaf tin.
    3. Bake in the preheated oven until a skewer inserted in the centre of the bread comes out clean, about 1 hour.

    Made this tonight but doubled the recipes into 2 cake tins also added blueberries and teaspoon vanilla essence and sprinkled some Demerara sugar over the top before baking for added crunch tastes delicious !!  -  23 Jul 2017


    I used two ripe bananas and one new as that was all I had, I have tried others but as i am not usually a big fan of banana bread i dont make it very often, only for my son. But this one I actually liked myself. Very good - only down side didn't rise very well in a 2lb tin even when used 1tsp baking powder.  -  10 May 2017


    This was easy to make and the kids loved it- wanted more!😊 I found it too sweet so 1/2 the sugar  -  15 Dec 2016
