    A creamy pesto and chicken pasta recipe, which is an incredibly easy weeknight dinner your family and friends will love.

    Serves: 4 

    • extra virgin olive oil
    • 300g chicken breast fillets, cut into small pieces
    • salt and pepper
    • 320g rigatoni pasta
    • 4 tablespoons pesto
    • 10 cherry tomatoes, quartered
    • 300ml creme fraiche
    • 80g Parmesan cheese, shaved

    1. Heat a little olive oil in a frying pan over medium high heat. Add the chicken and season with salt and pepper. Cook till lightly browned on all sides.
    2. Cook the pasta in a large pan of salted, boiling water following the instructions on the packet. Before draining, retain a little of the cooking water in case you need to thin out your sauce.
    3. To the chicken, add the pesto, tomatoes and creme fraiche and cook over low heat for a few minutes.
    4. Drain the pasta and add to the pan with the chicken. Toss well. Add a little pasta cooking water if needed to thin out the sauce.
    5. Serve pasta with plenty of Parmesan shavings.
