Banana chocolate chip cupcakes with cream cheese frosting

    These easy chocolate chip cupcakes topped with a buttery cream cheese frosting are a decadent upgrade on a classic favourite, banana cake.

    • 155g plain flour
    • 1/2 teaspoon bicarbonate of soda
    • 1/4 teaspoon baking powder
    • 1 pinch salt
    • 100g caster sugar
    • 80g soft brown sugar
    • 55g unsalted butter, softened
    • 1 egg
    • 2 ripe bananas, mashed
    • 80ml buttermilk
    • 85g chocolate chips (optional)
    • Frosting
    • 85g cream cheese, softened
    • 3 tablespoons butter, softened
    • 1 teaspoon vanilla extract
    • 250g icing sugar, or to taste

    1. Preheat oven to 180 C / Gas 4. Line a muffin tin with paper cases.
    2. Whisk flour, bicarbonate of soda, baking powder and salt together in a bowl.
    3. Combine caster sugar, brown sugar and 55g butter in another bowl; beat with an electric mixer until creamy. Beat in egg. Mix in mashed bananas. Add flour mixture in 3 batches, alternating with buttermilk, stirring after each addition. Fold chocolate chips into the cupcake batter.
    4. Spoon mixture evenly into the prepared muffin cases.
    5. Bake in the preheated oven until a skewer inserted in the centre comes out clean, about 20 minutes. Cool cupcakes on a wire rack, about 30 minutes.
    6. Beat cream cheese and 3 tablespoons butter in a bowl until smooth. Add vanilla extract. Beat in icing sugar, about 125g at a time, until frosting is smooth.
    7. Spread frosting over cupcakes.
