Peanut butter and chocolate chip cupcakes

    The classic combination of peanut butter and chocolate is highlighted in these fluffy and delicious cupcakes that are quick and easy to make. Top with your favourite buttercream.

    Serves: 12 

    • 125g plain flour
    • 1 1/2 teaspoons baking powder
    • 1 pinch salt
    • 110g soft brown sugar
    • 65g crunchy peanut butter
    • 45g unsalted butter, softened
    • 1 egg
    • 1/2 teaspoon vanilla extract
    • 120ml milk
    • 85g dark chocolate chips

    1. Preheat oven to 180 C / Gas 4. Line a muffin tin with paper cases.
    2. Whisk flour, baking powder and salt together in a bowl.
    3. Combine brown sugar, peanut butter and butter in another bowl; beat together with an electric mixer until creamy. Beat in egg and vanilla extract. Mix in flour mixture and milk; beat until smooth. Fold chocolate chips into the mixture.
    4. Spoon the cupcake batter into the prepared muffin tin.
    5. Bake in the preheated oven until a skewer inserted into the centre comes out clean, 20 to 25 minutes. Transfer to a wire rack to cool, about 30 minutes.

    Excellent recipe!!! I doubled the recipe and substituted half the butter for applesauce. Also, I added dark chocolate chunks and walnuts, instead of chocolate chips.
