About this recipe: The classic combination of peanut butter and chocolate is highlighted in these fluffy and delicious cupcakes that are quick and easy to make. Top with your favourite buttercream.


Serves: 12 

  • 125g plain flour
  • 1 1/2 teaspoons baking powder
  • 1 pinch salt
  • 110g soft brown sugar
  • 65g crunchy peanut butter
  • 45g unsalted butter, softened
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 120ml milk
  • 85g dark chocolate chips

  1. Preheat oven to 180 C / Gas 4. Line a muffin tin with paper cases.
  2. Whisk flour, baking powder and salt together in a bowl.
  3. Combine brown sugar, peanut butter and butter in another bowl; beat together with an electric mixer until creamy. Beat in egg and vanilla extract. Mix in flour mixture and milk; beat until smooth. Fold chocolate chips into the mixture.
  4. Spoon the cupcake batter into the prepared muffin tin.
  5. Bake in the preheated oven until a skewer inserted into the centre comes out clean, 20 to 25 minutes. Transfer to a wire rack to cool, about 30 minutes.
