Spelt and quinoa bread

    This easy, yeast-free bread is made with quinoa, spelt flour, almond milk and seeds. Add a hint of sweetness from treacle or honey.

    Ingredients
    Serves: 10 

    • 420g spelt flour
    • 120ml toasted, hulled sunflower seeds
    • 1 tablespoon chia seeds
    • 1 teaspoon salt
    • 1 teaspoon bicarbonate of soda
    • 475ml almond milk
    • 185g cooked quinoa
    • 1 tablespoon treacle, molasses or honey

    1. Preheat oven to 180 C / Gas 4. Grease a 23x13cm loaf tin.
    2. Combine flour, sunflower seeds, chia seeds, salt and bicarbonate of soda in a bowl; mix in almond milk, cooked quinoa and treacle. Transfer into the prepared loaf tin.
    3. Bake in the preheated oven until a skewer inserted into the centre comes out clean, about 1 hour.

    Quick & easy vegan bread recipe that's absolutely delicious. I substituted roasted pepitas (baby pumpkin seeds) because I find they have more flavor than sunflower seeds so always have them on hand. I doubled the chia seeds because they're so good for you, and sprinkled more on top for crunch. The time & temperature was perfect. Wrapped in a towel still warm & cooled on a rack so it comes out moist. Perfection. Nutty, delicious & so quick and easy with no rising or fuss.  -  19 Apr 2017  (Review from Allrecipes US | Canada)
