Mix mascarpone with blueberries and sugar and put in the fridge.
Preheat the oven to 200 C / Gas 6. Cut the crusts off the slices of bread. Roll each slice with rolling pin until it's flat.
Remove the filling from fridge. Place about 1 tablespoon of filling in the middle of the slice and cover with another slice of bread to create a sandwich.
Press down firmly on the outer edges of the pocket with a fork to seal the edges. Don't worry if your edges are uneven, you can leave them this way or trim slightly with a knife. Repeat this process 7 times until you have 8 sandwiches.
Mix eggs with milk and vanilla extract. Dip each sandwich in the egg and milk mixture on both sides and place on a greased baking sheet.
Bake for 20 minutes or until golden brown. Let cool for 5 minutes and sprinkle with some caster or icing sugar or drizzle with honey or maple syrup.
