Blueberry and mascarpone stuffed toast

    Basic recipe for quick and easy dessert. You can try any fruit or filling in any quantities, add cinnamon or more sugar, honey or anything you have in the cupboard. I took part in the Orchard for Tesco program and tried out Tesco blueberries which were vary tasty and fresh.

    • 250g mascarpone cheese
    • 150g blueberries
    • 1 teaspoon sugar
    • 16 slices white bread
    • 2 eggs
    • 4 tablespoons milk
    • 1 teaspoon vanilla extract

    1. Mix mascarpone with blueberries and sugar and put in the fridge.
    2. Preheat the oven to 200 C / Gas 6. Cut the crusts off the slices of bread. Roll each slice with rolling pin until it's flat.
    3. Remove the filling from fridge. Place about 1 tablespoon of filling in the middle of the slice and cover with another slice of bread to create a sandwich.
    4. Press down firmly on the outer edges of the pocket with a fork to seal the edges. Don't worry if your edges are uneven, you can leave them this way or trim slightly with a knife. Repeat this process 7 times until you have 8 sandwiches.
    5. Mix eggs with milk and vanilla extract. Dip each sandwich in the egg and milk mixture on both sides and place on a greased baking sheet.
    6. Bake for 20 minutes or until golden brown. Let cool for 5 minutes and sprinkle with some caster or icing sugar or drizzle with honey or maple syrup.
