About this recipe: This is our favourite creamy and fluffy buttercream icing that is perfect for piping and decorating. Tint with food colouring for any special occasion.


Serves: 8 

  • 115g unsalted butter, softened
  • 1 1/2 teaspoons vanilla extract
  • 250g icing sugar, sifted
  • 2 tablespoons milk
  • 3 drops food colouring, or as needed (optional)

  1. Beat the room temperature butter with a hand mixer, the paddle attachment of a stand mixer, or a wooden spoon until smooth and fluffy. Gradually beat in icing sugar until fully incorporated. Beat in vanilla extract.
  2. Pour in milk and beat for an additional 3-4 minutes. Add food colouring, if using, and beat for thirty seconds until smooth or until desired colour is reached.
