First you need to descale, chop and desalt your cod. First remove the skin and then, with the help of tweezers, remove the bones one by one. Cut the cod into pieces, about 3 to 4 cm, and place in a bowl and cover with tap water. Let soak and change the water three times a day for three days.
Next, pour flour into a bowl and dredge the cod in the flour on all sides.
Place the oil in a pan over high heat. Once the oil is hot, between 180 and 190 degrees C, add a few pieces of cod at a time. Depending on the thickness, fry for 4 to 6 minutes, till golden brown. Remove and drain on kitchen paper. Repeat with remaining cod.
