Banana cakes

    Tasty buns using soft bananas that are a little overripe. Enjoy them plain or with your favourite icing.

    Serves: 12 

    • 175g (6 oz) margarine
    • 175g (6 oz) caster sugar
    • 175g (6 oz) self raising flour
    • 1 large egg, lightly beaten
    • 1 medium very ripe banana, mashed

    1. Cream margarine and sugar until light and pale in colour.
    2. Add egg and flour a little at a time. Try not to add egg too quickly as it will curdle. Slowly add banana. Spoon mixture into muffin cases.
    3. Place in preheated 190 C / Gas 5 oven and bake for about 20 minutes, or until cakes are golden and spring back when pressed on top. (Should not leave a finger print.)
