Mrs L Grahams beetroot chutney from Lanarkshire

    This is a dear friend's mum's recipe, which has been loved by all who have tasted it. She now feels it is time to share some of her mother's lovely recipes. Thank you, Mum.

    Makes: 2 kg chutney

    • 1.4kg (3 lb) beetroot
    • 225g (8 oz) cooking apples - peeled, cored and chopped
    • 2 onions, chopped
    • 225g (8 oz) granulated sugar
    • 1 teaspoon salt
    • 600ml (1 pt) malt vinegar
    • juice of 1 lemon
    • 1/2 teaspoon ground ginger

    1. Boil whole beetroot for 1 1/2 hours. Drain well, then peel and cut into small cubes.
    2. Combine remaining ingredients in the pan and boil for 15 minutes.
    3. Add the beetroot and cook for 15 minutes more.
    4. Cool slightly and put into warm, sterile jars.
