Fabulous falafel burgers

    I like to do a couple of meals a week that are vegetarian, and I love these burgers. They are very tasty and quite simple to make. I don't like falafel that you can buy in shops so always make my own. Serve these with toasted pitta breads, tomato salsa and salad.

    • 400g tin chickpeas, drained and rinsed
    • 1 small onion, chopped
    • 1 garlic clove, crushed
    • 1 handful flat-leaf parsley, chopped
    • 2 tablespoons plain flour
    • 1 teaspoon ground cumin
    • 1 teaspoon ground coriander
    • 1/2 teaspoon harissa paste
    • salt and pepper to taste
    • 2 tablespoons sunflower oil
    • To serve
    • 2 toasted pitta breads
    • 200g tub salsa
    • salad leaves

    1. Pat the chickpeas dry with kitchen paper. Tip them into a food processor, along with the onion, garlic, parsley, flour, spices and a little salt and pepper, blend until fairly smooth.
    2. Shape the mixture into little burger shapes (if you rub a little oil into your hands it will prevent the mixture sticking to them).
    3. Heat the oil in a non-stick frying pan, add in the burgers and fry on a medium heat for about 3 minutes on each side until they are slightly golden. Serve with pittas, salsa and a salad.


    You could use chilli powder instead of harissa.
