About this recipe: This creamy chicken salad or sandwich filler has chicken, celery and spring onions with apple and pecans for crunch. Curry powder is added for a little spice and dried cranberries for colour. Serve in rolls or sandwiches, or on a bed of lettuce, if you prefer.


Serves: 6 

  • 280g cubed, cooked chicken
  • 1 unpeeled red apple, chopped
  • 90g dried cranberries
  • 60g thinly sliced celery
  • 25g chopped pecans
  • 2 tablespoons thinly sliced green onions
  • 180ml mayonnaise
  • 2 teaspoons lime juice
  • 1/2 teaspoon curry powder
  • 12 slices bread
  • 12 lettuce leaves

  1. Combine chicken, apple, cranberries, celery, pecans and spring onions in a bowl. Mix mayonnaise, lime juice and curry powder in a small bowl. Fold mayonnaise mixture into chicken mixture; stir to coat. Cover and refrigerate until ready to serve.
  2. Divide the filing on 6 slices of bread; top each one with a lettuce leaf and a slice of bread.
