These American-style pancakes are great for breakfast or weekend brunch. Serve with maple syrup, jam or fruit.

Ingredients
Makes: 20 pancakes
2 eggs
250ml milk
250g plain flour
2 tablespoons caster sugar
2 teaspoons baking powder
a pinch of salt
50g butter, melted

Whisk the eggs and milk together in a large bowl. Add flour, sugar, baking powder and salt; mix well.
Add the melted butter and mix again. The pancake batter will be quite thick.
Heat a non-stick pan over medium heat. Add a scoop of pancake batter to the pan - it will spread out into a pancake. Once small holes appear on top of the fried pancake, turn it over and fry on the other side.
Repeat with remaining batter, stacking the cooked pancakes as you go.
