Easy American pancakes


    These American-style pancakes are great for breakfast or weekend brunch. Serve with maple syrup, jam or fruit.

    Makes: 20 pancakes

    • 2 eggs
    • 250ml milk
    • 250g plain flour
    • 2 tablespoons caster sugar
    • 2 teaspoons baking powder
    • a pinch of salt
    • 50g butter, melted

    1. Whisk the eggs and milk together in a large bowl. Add flour, sugar, baking powder and salt; mix well.
    2. Add the melted butter and mix again. The pancake batter will be quite thick.
    3. Heat a non-stick pan over medium heat. Add a scoop of pancake batter to the pan - it will spread out into a pancake. Once small holes appear on top of the fried pancake, turn it over and fry on the other side.
    4. Repeat with remaining batter, stacking the cooked pancakes as you go.
