Spicy Polish gherkins

    This is a gherkin recipe for those who love their pickles garlicky and spicy.

    Makes: 10 0.5L jars

    • 2.5kg picking cucumbers
    • 3 tablespoons salt
    • For the brine
    • 500g granulated sugar
    • 350ml 10% (double strength) vinegar
    • 3 tablespoons chilli powder
    • 1.5 heads of garlic, cloves separated and sliced
    • 8 tablespoons vegetable oil

    1. Wash the cucumbers well and cut into long wedges.
    2. Sprinkle salt over the cucumbers and set aside for 6 hours. Drain.
    3. In a saucepan, mix sugar with vinegar, chilli, garlic slices and oil. Bring to the boil.
    4. Pack cucumber wedges tightly into jars and cover with brine. Close the lids and set aside for 2 to 4 weeks, depending on the level of acidity you prefer.
    5. Cucumbers should be stored in the fridge or in a cool and dark place. They will keep for at least 6 months.


    10% (double strength) vinegar is the standard vinegar in Polish pickles. It can be found in specialty stores and online.
