Roast chicken thighs in a bag

    Using a roasting bag is one of the easiest way to prepare chicken thighs. In the roasting bag they stay juicy and flavorful.

    Serves: 2 

    • 2 chicken thighs
    • 1 teaspoon chicken seasoning mix
    • 1 teaspoon paprika powder
    • 1 pinch of black pepper
    • 1 pinch salt
    • 2 garlic cloves, sliced
    • 2 sprigs parsley, minced
    • 1 pinch dried rosemary

    1. Wash chicken thighs and pat dry. Remove excess skin or fat.
    2. Rub the thighs with chicken seasoning mix, red pepper, sliced garlic, and sprinkle with chopped parsley and rosemary. Drizzle with olive oil, transfer into a bowl, cover and place in the fridge overnight.
    3. Remove chicken from the fridge and place in a roasting bag. Close the ends of the bag with a kitchen string. Place the bag in a roasting tin.
    4. Heat oven to 180 C / Gas 4. Roast in preheated oven for 1 hour. The skin should be golden brown.


    If not using a roasting bag, these thighs can be easily roasted in a baking tin. Pour 2 tablespoons olive oil in the tin, arrange the thighs in the tin, then pour in 250ml water. Cover with aluminium foil and bake for 1 hour as described above. Check from time to time if there is still some water in the tin and add more if necessary.
