Polish buttermilk pancakes

    These pancakes are my kids' favourite breakfast. Best served with icing sugar or maple syrup and a cup of hot cocoa.

    Serves: 4 

    • 200g plain flour
    • 140ml buttermilk
    • 1/2 teaspoon bicarbonate of soda
    • 2 eggs
    • 3 teaspoons caster sugar
    • 1 teaspoon ground cinnamon
    • 2 tablespoons icing sugar
    • 1 teaspoon vanilla sugar
    • 1 pinch of salt
    • vegetable oil for frying

    1. Mix flour with bicarb of soda, then add the eggs, buttermilk, sugar, cinnamon and salt. The batter should have cream-like texture.
    2. Heat oil in a large frying pan and pour some batter using a ladle making pancakes 4cm in diameter. Fry on both sides until nicely browned.
    3. Serve dusted with icing sugar.
