Polish people love their cabbage in every form and every colour! This fresh red cabbage slaw is often made during the autumn months, when bright colours are much appreciated. You don't have to boil the cabbage if you prefer it raw.

1L cold water
1/2 head red cabbage, rinsed and sliced
1 medium onion, finely sliced
1 apple, peeled and grated
1 tablespoon good quality vegetable oil
1/2 lemon, juiced
salt and pepper to taste
a pinch of sugar

Bring 1 litre of water to the boil in a pot; add cabbage and cook for a couple of minutes until softened. Drain well.
Mix the cabbage, sliced onion, grated apple, oil and lemon juice. Season to taste with salt, pepper and sugar.
