Smoked sausage and lentil slow cooker stew

    A hearty flavoursome stew, perfect for lunch or dinner on a cold day! Smoked sausage can be substituted for any type of sausage, but it should be one that won't fall apart after slow cooking.

    • 600g good quality smoked sausage
    • 500g lentils
    • 1 large white onion, finely diced
    • 1 large carrot, finely diced
    • 1 stick celery, finely diced
    • 1ltr beef stock
    • 500g passata (or chopped tomatoes)
    • 1tbsp tomato purée
    • 1tbsp Worcester sauce
    • 1tsp tabasco
    • 2-4 garlic cloves, minced or finely chopped
    • 3 tsp chopped fresh parsley.
    • Salt and pepper to taste.


    1. Gently fry the onion, carrot and celery in a pan with a bit of salt and pepper, for about 5-10 mins, or until soft and slightly brown, then place in the slow cooker.
    2. Chop the sausages into large chunks, about 1inch thick, then place in the slow cooker along with the remaining ingredients.
    3. Stir well and cook covered on high for 3 hours , or 6-8 hours on low. Add more water during cooking if necessary. The lentils should absorb the vast majority of the liquid, but it should not be a dry dish.
    4. Serve on its own or with crusty buttered bread. Enjoy!
