Blueberry flapjacks

    So here's my recipe for chewy blueberry flapjacks. There great as a snack or for breakfast.

    Makes: 12 flapjacks

    • 320g demerara sugar
    • 350g butter
    • 4 tablespoons golden syrup
    • 70g plain flour
    • 500g rolled porridge oats
    • 150g blueberries

    Prep:10min  ›  Cook:30min  ›  Ready in:40min 

    1. Preheat the oven to 180 C / 160 C Fan / Gas 4.
    2. In a saucepan melt the sugar, butter and golden syrup. Once melted, take off the heat and mix in the flour and rolled oats until fully combined. Add the blueberries and mix briefly. Pour the mixture into a greased and lined baking dish.
    3. Bake for around 30 minutes until golden brown
    4. Leave to cool down overnight or in the fridge for a few hours before turning out and cutting into squares.
