A super easy frozen cake formed with layers of biscuits and a sweet and creamy mixture of condensed and evaporated milk and lime juice. A favourite in Mexico.

1 (397g) tin sweetened condensed milk
1 (410g) tin evaporated milk
500g limes, juiced
2 (170g) rolls Marie or Rich tea biscuits

Combine condensed milk and evaporated milk in a blender, and blend for a few seconds. With the blender on, gradually add the lime juice and continue blending until thickened.
Arrange a layer of biscuits at the bottom of a 23x33cm (9x13 in) glass baking dish and pour over enough of the creamy mixture to cover them. Repeat the biscuits and creamy mixture layers, finishing with a layer of creamy mixture.
Freeze for at least 2 hours. Remove from the freezer, cut and serve immediately.
