Mexican huevos rancheros

    This is the authentic Mexican version of fried eggs over fried tortillas layered with refried beans and tomato sauce. You may never want a fry up again after trying this!

    Serves: 1 

    • 1 large roma tomato
    • 1 green serrano chilli
    • 1 garlic clove
    • salt and pepper to taste
    • 4 tablespoons vegetable oil
    • 2 corn tortillas
    • 2 eggs
    • 4 tablespoons refried beans

    1. Boil the tomato, chilli and garlic for 5 minutes. Drain and let coo slightly. Peel the tomato and blend with the chilli, garlic and a pinch of salt and pepper. Set aside.
    2. Heat oil in a small frying pan over high heat. Fry the tortillas individually for about 10 seconds, until soft (not crispy). Place on a serving plate.
    3. Reduce heat to medium. Crack eggs into frying pan, and fry as desired.
    4. To assemble the huevos rancheros, spread 2 tablespoons refried beans on each tortilla, add an egg on top, then top with tomato sauce. Serve immediately.
