Pan-fried salmon

    The secret to delicious salmon is how you cook it. If you overcook it, it will be dry. I pan-fry the salmon fillets for a few minutes on each side, making sure the centre stays pink.

    Ingredients
    Serves: 6 

    • 1 tablespoon olive oil
    • 1 clove garlic, minced
    • 1 pinch curry powder
    • 6 skinless salmon fillets
    • salt and freshly ground pepper

    Method

    1. Heat the olive oil in a large pan over medium heat; add the minced garlic and curry powder. Rub salt and pepper on one side of the salmon fillets; pan-sear that side first for 3 or 4 minutes.
    2. While the seasoned side cooks, rub salt and pepper on the other side of the fillets. Turn them and allow them to cook for a further 3 or 4 minutes. Remove from the heat and serve immediately.
